LIMA sits firmly at the top of my list. Founded by Virgilio Martínez — one of the world's most celebrated chefs — it became the first Peruvian restaurant in Europe to earn a Michelin star, back in 2014, and it has held onto it ever since. The restaurant is known for its signature ceviches, grilled meats, and vibrant tiraditos, all built around the biodiversity Martínez is famous for showcasing at Central, his flagship restaurant in Lima, Peru.
